These easy-to-make Christmas cookies are fun to make and delicious to eat! They’re also great to give as little Christmas gift treats to family and friends.
Easy-to-make Christmas cookies to enjoy with your family and friends this festive season.
1 cup castor sugar
1 1/2 teaspoons vanilla extract
2 free-range eggs
3 cups plain flour
1 teaspoon bicarbonate of soda
2 teaspoons cream of tartar
Icing and an assortment of sweets, to decorate
Preheat oven to 180ºC and line baking trays with non-stick baking paper. Using a stand mixer, cream the butter and sugar until light and fluffy.
Add the vanilla extract and eggs; and sift in the flour, bicarb and cream of tartar. Mix until a smooth dough has formed.
Knead the dough lightly on a floured surface, wrap in plastic wrap and put in the fridge for 30 minutes.
Roll the dough between two sheets of baking paper until 5mm thick. Cut out biscuits using Christmas-themed cutters and place on baking trays.
Bake for 10 minutes or until golden. Place on wire cooling trays.
Decorate with icing and your choice of sweets.
